Vegan Taiwanese Braised Pork Style Mushroom Rice 台湾卤肉式香菇饭 Chinese Rice Cooker Recipe

This Vegan Chinese Mushroom Rice recipe is really easy to execute and best of all, delicious. This dish was inspired by the famous Taiwanese Braised Pork Rice but we gathered that some of you cannot take pork or animal derived ingredients so we decided to replicate the taste using mushrooms instead. As this is a rice cooker recipe, you just need one pot. Even if you don't have a rice cooker, you can cook this in a normal pot over your stove. You can also use your multicooker to cook as long as your cooker has the rice cooking function. If your rice cooker doesn't have the fry function, try turning on your rice cooker and set the rice cooking function with the lid open. Then see if the pot gets hot. If it does then you can just use it to fry the ingredients first before resetting the rice cooking function again to cook the rice normally as you would with normal rice. For those of you who are cooking for more, just ensure that your rice to water ratio is 1:1. This means that if you need to cook 3 cups of rice, just use 3 cups of water. Of course you'll need to increase the other ingredients proportionately. Easy, right?

Rice Cooker Vegan Chinese Mushroom Rice 台湾卤肉式香菇饭 Taiwanese Braised Pork Style Vegan Rice
Ingredients:
Serves 4 pax

8 cloves of shallot (thinly sliced)
1 cinnamon bark
1 star anise
4 cloves of garlic (chopped)
6 pieces Chinese dried mushrooms (rehydrated & diced)
200g of oyster mushroom (diced) - you can use any types of fresh mushrooms
2 cups rice (use rice cup or a 210ml cup to measure)
2 tablespoons vegetarian mushroom sauce or Chinese mushroom sauce
1 tablespoon premium dark soy sauce
A few dashes of white pepper
2 cups water (use rice cup or a 210ml cup to measure)
1 teaspoon salt

Note: If you do not need this dish to be vegan, you can use regular oyster sauce.
